It was late in the evening when I realized I had nothing to feed my kids for breakfast the next morning before sending them off to school. I ransacked the fridge and pantry trying to come up with something nourishing, satisfying, fulfilling, and delicious.
I opened my freezer and saw a bag of frozen berries. Frozen berries are good! In fact, frozen berries may be more nutritious than fresh! The minute a berry is picked, it begins to lose nutrients, so how long after harvesting you eat it impacts its nutritional value. Most berries in our supermarkets have been transported a long distance over a lengthy period, and may contain less than half of the original nutrient content. On the other hand, berries frozen right after harvest preserve almost all of their vitamins and antioxidants and last up to one or two years. |
With that in mind I took out the bag of frozen berries from my freezer. Then I checked my pantry. The bag of chia seeds caught my attention. All the good stuff I knew about this superfood started to flow into my head. Protein, Magnesium, Fiber, Vitamin C, Antioxidants, Omega–3, and more... These small tiny seeds are no joke. So I grabbed the bag together with a bag of raw cacao powder that was next to it. Another top source of antioxidants, and it contains an abundance of magnesium and iron. At this point I had an idea for breakfast! I even made up the name for it. It's gonna be called Berry-Choco-Chia! Little I knew it would become one of the kids' favorite breakfast! It is so easy to make and it is nourishing, satisfying, fulfilling, and delicious. Just the way I wanted! Kid's have it at least once a week. It is also good as a dessert.
Instructions
Mix Berries, Milk, Cacao and Honey or Maple syrup together in a Blender. Pour liquid into a bowl. Add chia seeds and mix. Pour it into 2 ramekins. Cover with plastic wrap and refrigerate overnight. Add fresh berries of your choice and enjoy! Makes 2 servings.
