Its Day 9 of my “4 Weeks Raw Challenge”. I was looking through random pictures of food on my Mac for inspiration when I came across a picture of Baklava – a well-known dessert originating from Turkey. It is a sweet pastry made of layers of filo filled with chopped nuts and sweetened and held together with syrup or honey.
Being Gluten Free I don’t eat filo. Being raw at this time I don’t use syrup and I don’t have raw honey on hand, which is a no-go for strict vegans (though I am a Plant-Based kinda girl and honey is accepted in my household sometimes).
4 Dates (soaked in water)
2 Tbsp lemon juice
1 tsp raw cacao powder
2 cups of dehydrated apple
Cacao Nibs for extra crunch and decoration (optional)
Now that I have the apples and walnuts I need to think of a raw sweetener. DATES! Dates are so sweet I can never eat them alone. Lately they have become my number one choice to sweeten things. These delicious fruits contain oil, calcium, sulfur, iron, potassium, phosphorous, manganese, copper and magnesium which are all beneficial for health. Some health specialists have said that eating 1 date per day is necessary for a balanced and healthy diet. Dates can significantly boost your energy levels within half an hour of consumption. I can go on and on about the benefits of dates, but trust me – dates are better than cane sugar which I don’t have in my household at all for over a year now.
So, I have dried apples, I have walnuts, I have dates. Now it’s time to assemble it into a Raw Dessert.
Assemble stackers. Start with a layer of apples then layer of paste followed by another layer of apples. I suggest you make 3 layers of apples and 3 layers of paste. Decorate top layer of paste with Cacao Nibs and serve.
You may also use the paste as a dip for your apple slices.
