Kohlrabi Soup

I love German soups! Especially when they are thick and hearty like German Eintopf (translates as "one pot"). You literally drop all ingredients to a pot and cook them. It is great, rejuvenating and filling. Here is my plant-based version of German kohlrabi  Eintopf.

Ingredients

  • 3 Kohlrabi bulbs with the leaves
  • 4 carrots
  • 2 potatoes
  • 1 onion
  • 1 can of Garbanzo beans (optional)
  • Parsley
  • 1 tbsp of thyme
  • 1/4 tbsp chili pepper
  • Salt to taste

Instructions

  1. Cut all vegetables in small cubes
  2. Bring 2 pints if water to a boil, add cut vegetables and garbanzo beans
  3. Cook on a low heat for about 20 minutes
  4. Add parsley, thyme and chili pepper
