- Cut all vegetables in small cubes
- Bring 2 pints if water to a boil, add cut vegetables and garbanzo beans
- Cook on a low heat for about 20 minutes
- Add parsley, thyme and chili pepper
I love German soups! Especially when they are thick and hearty like German Eintopf (translates as "one pot"). You literally drop all ingredients to a pot and cook them. It is great, rejuvenating and filling. Here is my plant-based version of German kohlrabi Eintopf.
