Mung beans are rich in protein - 1 cup contains about 14 grams of plant based protein. They are also rich in magnesium, Vitamin B1, Manganese and Zinc.
- Rinse and soak mung beans overnight.
- Chop bell peppers and onions.
- Mix all together and add dressing.
- 2 tbsp of olive oil
- 2 tbsp of lemon juice
- 1 clove of garlic (crushed)
- 2 tbsp of soy aminos, nama shoyu or tamari
